Turkey Sausage with Apricots & Currents

You will need:

2 lbs turkey sausage
1 cup brown rice (prepared in rice cooker)
2 red bell peppers (sliced)
1 large red onion (sliced)
1 cup fresh basil
½ cup dried apricots
½ cup dried currents
3 tablespoons honey
2 tablespoons vinegar
1 cups baby carrots
Olive oil for drizzling.

Grill peppers and onions on griddle with a little olive oil until slightly charred. Set aside.

Grill sausage on griddle. Set aside.

Boil carrots and drain.

Place drained carrots on griddle to golden. Set aside.

Place apricots and currents on griddle and drizzle with honey and vinegar. Grill until softened.

Place cooked rice in large bowl.

Top with peppers, onions, carrots and sausage and toss lightly.

Place basil on griddle drizzle with a little olive oil and grill about two minutes. Place on top of sausage, and serve.

  2. I don't often eat turkey sausage, but this makes me want to go out and buy some. I really like the idea of using apricot and currants with this, too, not to mention a whole cup of fresh basil. Thanks for sharing this!
