Grilled Eggplant with Garlic and Capers


You will need:

2 small eggplants (sliced with skin)
1 cup Italian Parsley (chopped)
4 cloves garlic (crushed and chopped)
1 tablespoon capers
1 large sweet onion
¼ cup grated Romano cheese (if desired)

For Dressing, you will need:

¼ cup olive oil
Juice of 1 lemon
2 tablespoons vinegar
¼ teaspoon red pepper flakes
1 teaspoon oregano

Grill eggplant, onion and garlic with drizzle of olive oil, grill until golden.

Combine eggplant with garlic and onion in serving platter.

Add capers and parsley.

Combine all ingredients for dressing and drizzle over veggies.

Add grated Romano cheese.

Enjoy!
