Fresh Strawberry Coffee Cake

Align Center

Adapted from Betty Crocker Fall baking

(With a few changes to make it my own)


You will need:

½ cup unsalted butter (softened)
¾ cup butter milk
1 egg
2 cups all- purpose flour
½ cup sugar
2 tsps baking powder
1 cup fresh strawberries(cut up)

Glaze:

½ cup powdered sugar
1 tblsp butter
3 tsps water
¼ tsp almond extract

Heat oven to 350 degrees:

Butter 8x8 inch square baking pan

In medium bowl, beat softened butter, buttermilk, vanilla and egg with a spoon.

Stir in flour, sugar and baking powder until flour is moistened.

Fold in strawberries.

Bake 30-35 minutes or until top is golden or until toothpick inserted in center comes out clean.

Let cake cool.

Mix the glaze ingredients until thin enough to drizzle over warm coffee cake.

This recipe is simple and delicious and does go great with a good cup of coffee!

This coffee cake looks perfect! I love incorporating fruits into my desserts. Then I can try to pretend like I'm eating something healthy.

I'm loaded with fresh strawberries so I made this coffee cake this morning. The flavor is amazing! My family loved it!

Question - how much vanilla? I added about a tsp and it seemed OK.

Addition - strawberries in the glaze - my family loved it and it added more strawberry flavor. I diced some berries into a pan with a bit of water and cooked them until soft then added the butter and powdered sugar. I switched the almond to vanilla as well.

Time? - I ended up baking it for nearly 40 minutes.
