Yummy! Stuffed Crust Pizza


You will need:

1 fresh pizza dough - (can buy at your local pizzeria)
¼ red onion (sliced)
½ cup of your favorite prepared sauce
2 cups grated mozzarella
½ cup grated Romano cheese
3 sausage patties
3 cloves garlic (crushed and chopped)
½ cup fresh basil (chopped)
1 tsp. oregano
olive oil for drizzling

Preheat oven – 400 degrees:

Grill sausage, garlic and onion until onion is soft.

Roll out pizza dough (not too thin) and place on pizza pan.

Place shredded mozzarella around edge of pizza, fold over and pinch down.

Place sauce on pizza (not too much).

Place remaining mozzarella and Romano cheese on pizza.

Place sausage, garlic, onion, basil and oregano on pizza and drizzle with about 2 tablespoons of olive oil.

Place in oven for about 20-25 minutes or until crust is golden.

Macaroni with Peas and Chop Meat

You will need:

2 ½ lbs. chop meat
1 lb. bag of frozen peas
3 ripe beef steak tomatoes (chopped)
3 cloves garlic (chopped)
1 cup fresh basil (chopped)
1 tablespoon oregano
1 tsp. black pepper
3 tablespoons olive oil
1 box of your favorite macaroni
Romano cheese for grating

In large frying pan cook chop meat and then drain in colander and set aside.

Heat large frying pan with olive oil and place tomatoes, garlic, basil and peas. Toss and sauté until tomatoes are soft.

Cook macaroni as directed on box.

Add chop meat and macaroni to veggies and toss.

Drizzle with a little extra olive oil and garnish with grated Romano cheese.

Ginger Garlic Chicken Strips

You will need:

2 ½ lb. boneless chicken breast
4 cloves garlic (crushed)
4 tablespoons olive oil
1 inch piece of fresh ginger (grated)
juice of 1 lemon
3 tablespoons Teriyaki
2 tablespoons Soy sauce
1 tablespoon curry powder
1 quart of white button mushrooms (halved)
1 large beefsteak tomato (sliced)1 head Romaine Lettuce

Cut chicken into strips.

Combine garlic, olive oil, ginger, lemon juice, Teriyaki, soy sauce, curry powder and mix. Add chicken strips to this mixture and let sit in refrigerator covered for about 1 hour.

In large heated frying pan place chicken strips and let sauté for about 4 minutes on each side.

Heat griddle and place mushrooms drizzle with a little olive oil and let golden.

Place Romaine lettuce and drizzle with a little olive oil and let grill and soften, finally place tomatoes on griddle and let grill.

Set veggies in platter and then place chicken from frying pan on griddle and let chicken finish cooking and become golden on each side.

Plate with veggies and drizzle a little olive oil over platter and serve.

Fresh Oriental Salad

You will need:

1 bunch green leaf lettuce
1 small head fennel (sliced thin)
1 small red onion (sliced thin)
1 cup baby carrots (sliced thin)
¼ head white cabbage (sliced thin)
¼ head red cabbage (sliced thin)
1 gourmet cucumber

Combine all salad ingredients in a large bowl.

Oriental Dressing:

1 tsp. Wasabi paste
3 inch piece fresh ginger (grated)
4 tablespoons soy sauce
4 tablespoons Teriyaki sauce
1 tsp. Sesame oil
2 tablespoons vinegar
3 tablespoons light olive oil

Combine all dressing ingredients and mix well.

Party Chili!

You will need:

5 lbs. chop meat
1 -1 lb. can crushed tomatoes
2- 16oz. jars salsa
2- 1 lb. 13oz. cans red kidney beans (rinsed and drained)
5 stalks celery (chopped)
1 large Spanish onion (chopped)
5 cloves garlic (chopped)
1 cup cilantro (chopped)
1 orange pepper (chopped)
3 jalapeños (chopped)
1 tablespoon cumin
1 tsp. red pepper flakes
1 tablespoon cayenne pepper
1 tablespoon paprika
2 tablespoons chili powder
1 tsp. black pepper
1 tsp. salt
2 tablespoons olive oil

In large frying pan cook chop meat. Drain the fat.

In separate large frying pan drizzle olive oil and sauté veggies for about 4-5 minutes.

Add crushed tomatoes and salsa and continue to simmer on low heat for another 5 minutes.

Add beans and meat and simmer for another 3-4 minutes on low.

Add chop meat and spices and simmer for another 3-4 minutes.

Serve over rice or macaroni.

Macaroni Salad with Chickpeas

You will need:

1 box of elbow macaroni (prepared as directed on box)
1 cup cilantro (chopped)
2 stalks celery (chopped)
½ tsp. red pepper flakes
½ tsp. black pepper flakes
1 lb. 13oz. can chickpeas
½ red onion (chopped)

Dressing:

3 tablespoons mayonnaise
juice of 1 lemon
2 tablespoons vinegar

Combine all of the above ingredients.

Add dressing and toss well.

Oven Fried Cornmeal Party Chicken!

You will need:

3 lbs. chicken thighs
3 lbs. chicken legs
2.5 lbs. chicken wings
3 cups white cornmeal
4 eggs
1 cup low fat milk

2 cups oats
4 cups Italian style breadcrumbs
2 cups oatmeal
Olive oil for drizzling over chicken

Preheat oven 350 degrees:

Use cooking scissors to take skin off of the chicken thighs and legs.

Beat eggs and combine with milk.

Combine breadcrumbs with oatmeal.

In separate bowls set out cornmeal, egg and milk wash, and breadcrumbs combined with oatmeal.

Dip chicken first in cornmeal then egg and milk wash then in breadcrumbs and oatmeal mixture.

Place chicken in baking dish and drizzle olive oil over each piece of chicken.

Bake for about 50- 55 minutes or until chicken becomes golden.

Turkey Sausage with Apricots & Currents

You will need:

2 lbs turkey sausage
1 cup brown rice (prepared in rice cooker)
2 red bell peppers (sliced)
1 large red onion (sliced)
1 cup fresh basil
½ cup dried apricots
½ cup dried currents
3 tablespoons honey
2 tablespoons vinegar
1 cups baby carrots
Olive oil for drizzling.

Grill peppers and onions on griddle with a little olive oil until slightly charred. Set aside.

Grill sausage on griddle. Set aside.

Boil carrots and drain.

Place drained carrots on griddle to golden. Set aside.

Place apricots and currents on griddle and drizzle with honey and vinegar. Grill until softened.

Place cooked rice in large bowl.

Top with peppers, onions, carrots and sausage and toss lightly.

Place basil on griddle drizzle with a little olive oil and grill about two minutes. Place on top of sausage, and serve.

Mushrooms, Garlic, Fennel & Macaroni

You will need:

½ cup parsley (chopped)
½ cup cilantro (chopped)
4 cloves garlic (crushed)
1 10oz.container mushrooms (halved)
¼ head of fennel (sliced)
½ tsp. red pepper flakes
¼ cup grated Romano cheese
3 or 4 tsps. olive oil
16 oz. of your favorite macaroni

In large heated frying pan place olive oil, mushrooms, garlic, fennel, cilantro and parsley.

Let mushrooms get slightly golden and let fennel soften.

Prepare macaroni according to directions.

Add macaroni to mushrooms and add red pepper flakes and cheese and toss gently.

Waist Line Friendly!~ Chocolate Chip Cookies

You will need:

2 heaping cups of flour
1 - 16 oz. package chocolate chips
¾ tsp. baking soda
½ cup brown sugar
½ cup applesauce
1 whole egg plus 1 egg white
1 tablespoon vanilla
4 tablespoons molasses
1 cup oats
¼ cup 1% milk
2 tablespoons butter

Preheat oven 350 degrees

In large bowl combine all dry ingredients and mix well.

In small bowl combine all wet ingredients and mix well.

Combine both bowls and add chocolate chips. Mix well with electric mixer.

Spoon the dough onto a non-stick cookie- sheet and place in preheated oven for about 10-12 minutes or until golden.

Easy Low-Fat Two-Bean Chili

You will need:

2 lbs ground sirloin
1 - 15 ½ oz. can red beans (drained and rinsed)
1 - 1 lb 13 oz. can Cannellini beans (drained and rinsed)
2 stalks celery (chopped
4 cloves garlic (chopped)
½ cup cilantro (chopped)
2 - 16 oz. jars salsa
1 tablespoon chili powder
1 teaspoon paprika
3 tablespoons olive oil

In large heated frying pan drizzle olive oil.

Combine garlic, onion, parsley, celery and cilantro. Sauté about 3 minutes.

In separate frying pan cook chop meat and then drain fat in colander.

Add salsa and beans to sautéed garlic and onion. Toss gently.

Add chop meat. Toss again, gently.

Sauté about 5 minutes.

Serve over rice or macaroni.

Enjoy!

Warm Chicken Salad

You will need:

1 cup cooked brown rice

2 left over baked chicken breasts (cubed)

½ cup cilantro (chopped)

½ cup parsley (chopped)

1 small red onion (chopped)

2 stalks celery (chopped)

1 teaspoon paprika

1 teaspoon curry

½ tablespoon olive oil (for drizzling over grill)

½ teaspoon black pepper


Dressing:
4 tablespoons olive oil
Juice of 1 small lemon

1 tablespoon vinegar

Drizzle griddle with a little olive oil.


Heat all veggies and chicken on griddle.


Place in bowl and add spices.


Add rice and salad dressing. Toss well.


Serve over lettuce.
