Oatmeal Chocolate Chip Cookies

You will need:

3 cups flour
1 cup sugar
½ cup dark brown sugar
1 egg
1 cup oats
4 tablespoons butter (softened)
½ cup applesauce
3 tablespoons marmalade
1 tsp. vanilla
dash of nutmeg
dash of cinnamon
½ cup chopped almonds
2 cups chocolate chips
1 cup lowfat milk

Preheat oven 350 degrees:

In large bowl combine all dry ingredients.

In smaller bowl combine egg, applesauce, butter, marmalade, vanilla and milk and beat with electric mixer and add at dry ingredients.

Mix combined ingredients well.

Spoon onto non-stick baking pans and bake for about 15 minutes or until golden.

Grilled Apples with Spices

You will need:

About 7 apples (peeled and sliced)
½ tsp. cinnamon
½ tsp. paprika
½ tsp. cumin
½ tsp. chili powder
½ tsp. sugar
½ tsp. curry
2 tablespoons of currants
Olive oil for drizzling

Heat griddle and place apple slices on griddle.

Drizzle olive oil over apples and sprinkle currants on griddle, and continue to grill a few more minutes.

Sprinkle with spices and allow to keep grilling a few more minutes.

Baked Chicken Strips

You will need:

2 lbs. chicken breast
1½ cups flour
2 cups seasoned bread crumbs
4 eggs (beaten)
Olive oil for drizzling

Preheat oven 350 degrees:

Cut chicken into strips.

Dip chicken first in flour, then eggs, then bread crumbs.

Place chicken in baking pan and drizzle with olive oil.

Place in oven for about 20 minutes or until golden.

Sautéed Red Leaf Lettuce with Spaghetti & Grilled Mushrooms


You will need:

1 box of favorite speghetti
1 head of red leaf lettuce (cleaned and chopped)
1 sweet onion (sliced)
4 cloves garlic (crushed and chopped)
1 jalapeño (sliced without seeds)
1 vine ripe tomato (chopped)
½ quart of white mushrooms (sliced)
1 tablespoon oregano
1 tsp. black pepper
3 tablespoons olive oil
Romano cheese for garnish

In large frying pan place olive oil and heat slightly. Carefully add onion, garlic, jalapeño, tomato and lettuce.

Add oregano and black pepper.

Sauté until veggies cook down.

Heat griddle and grill mushrooms until slightly golden and add to veggies.

Prepare favorite spaghetti and add to veggies.

Drizzle with olive oil and garnish with cheese.

Enjoy!

Wasabi & Ginger Cucumber Salad

You will need:

2 gourmet cucumbers
1 vine ripe tomato
½ red onion (sliced)

Peel and slice cucumbers in medium sized bowl and add onion slices.
Squeeze pulp of tomato into bowl with cucumbers and onion.

Dressing:

1 inch of fresh ginger - grated
1 clove of garlic – grated
¼ tsp.Wasabi paste
1 tablespoon Vinegar
2 tablespoons Soy sauce
1 tablespoon Lemon juice
¼ cup olive oil

Combine all of above and pour over cucumbers.
Toss and serve.

Baked Salmon Steaks with Apricot and Chili Paste Sauce

You will need:

3 Salmon steaks
1 tablespoon Soy Sauce
1 tablespoon Teriyaki Sauce
1 tablespoon Apricot jam
1 tsp. Sesame Oil
½ tsp. Chili paste
2 tablespoons olive oil (for drizzling)

Preheat Oven 350 degrees

Combine Soy Sauce, Teriyaki Sauce, Apricot jam, Sesame oil and Chili paste.

Brush this mixture over Salmon Steaks and then drizzle with olive oil.

Bake in oven for about 15-20 minutes.

Enjoy!

Rice and Scallions


You will need:

1 cup uncooked white rice
¼ tsp. cumin
¼ tsp. paprika
¼ tsp. turmeric
¼ tsp. curry
3 bunches scallions- sliced
3 cloves garlic – crushed and chopped
1 jalapeño – sliced - without seeds
3 tablespoons olive oil

Prepare rice in rice cooker – add spices to water before beginning to cook.

In large frying pan place olive oil and heat.

Add scallions and jalapeño – allow to brown a little and then add garlic.

Add rice to frying pan and toss.

Lemon & Garlic Chicken Breast

You will need:

4 boneless chicken breasts

Marinade:

Juice of 2 lemons
3 tablespoons vinegar
¼ cup olive oil
5 cloves garlic (crushed and chopped)
1 tablespoon dried oregano
1 tablespoon garlic pepper
1 tablespoon dried thyme

Combine all of above ingredients for marinade and mix.

Place chicken breasts in marinade and cover.

Place chicken in refrigerator for about 2 hours or as long as over night.

Remove chicken from refrigerator and place in large heated frying pan for about 8 minutes on each side.

Finish cooking chicken on griddle so chicken will become a beautiful golden color.

Remove from griddle and drizzle with a little olive oil and serve.

Yummy! “Sloppy Joe”


You will need:

2 ½ lb. chopped meat
2 bunches of scallion (sliced & chopped)
1 red onion (sliced)
1 28 oz. can crushed tomatoes
5 cloves garlic (crushed & chopped)
1 Jalapeño (chopped with seeds)
2 tablespoons Worcestershire Sauce
1 tablespoon garlic powder
1 tablespoon paprika
1 tsp. hot sauce
½ cup cilantro (chopped)
½ cup parsley (chopped)
3 tablespoons olive oil
1 tsp. curry
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. dried parsley

In large frying pan cook chop meat and drain in colander. Set aside.

In large heated frying pan with olive oil place scallions, garlic, cilantro, parsley, and hot sauce. Sauté for about 5 minutes and then add chop meat and sauté for another minute or two. Add crushed tomatoes, Worcestershire Sauce, spices and dried herbs.

On griddle - grill red onion slices and add to chop meat and toss.

Heat your favorite bread on griddle and drizzle with olive oil, top with “Sloppy Joe”.

Garnish with grated Romano cheese.
