Lemon-Basil Baked Chicken


Ingredients:
6 skinless chicken legs and thighs
½ cup fresh basil – torn
6 cloves of garlic – crushed and chopped
¼ cup fresh lemon juice
3 tablespoons of olive oil
½ tsp black pepper
½ tsp curry powder
¼ tsp ground cinnamon

Combine the chicken, basil, garlic, lemon juice, black pepper, curry, cinnamon and olive oil in a Tupperware container and refrigerate for ½ an hour or longer.

Preheat oven to 350 degrees:

In a baking dish place the marinated chicken and bake for 35-40 minutes.

This is a very simple, delicious and exotic flavored chicken.

Looks fabulous... sorry I haven't been around for awhile, I moved to the US Virgin Islands (I still giggle when I say that) for six months, and it is taking awhile to get settled. But i do think I am caught up, and will be back with new postings...
