Pork Taco


Ingredients:

2 cups sliced cooked pork
1 tablespoon capers
4 cloves garlic – chopped
1 medium onion – sliced
1 stalk celery – chopped
½ cup chopped cilantro
1 jalapeƱo – sliced – with or without seeds
½ cup grape tomatoes – halved
Juice of ½ lime
3 tablespoons olive oil
½ tsp cumin
½ tsp chili powder
½ tsp cinnamon

Combine all of the above ingredients in a large bowl and toss.

In a heated frying pan place these ingredients and toss until the onions are slightly soft and the meat is heated through.

Heat the taco shells on the griddle and fill with fresh shredded lettuce a little shredded cheddar cheese and the tossed pork.

This is a great tasty way to use up your leftover pork and have a fun, tasty, anytime meal.

We have Tacos every Tuesday!! Its huge in our house! Taco Tuesday has been a tradition that my kids and their friends look forward to. These look great! I love the capers on it!

This sounds great! I usually just do the old ground beef thing, so this is something different I can try. I don't want the wife and kids getting bored with the same thing, you know :)

I love tacos! Your recipe looks totally delicious! I just made Tyler Florence's Stewed beef tacos and the were a sad disappointment! Lots of work and I'm not able to even blog about it!!!!

I just took tortillas out of the freezer today for tomorrow's dinner. Thought I would make some chicken tacos but the pork sounds so much better!

Made these last night and they were excellent. Was looking for a recipe to use up leftover smoked pork. Only thing I didn't use was the cinnamon. Will have to double it the next time. There were no leftovers!
