Panko Crusted Chicken Strips


Ingredients:

2 lbs. boneless chicken breast – sliced thin

Crust:

1 cup all-purpose flour
3 eggs – beaten with a splash of water
2 cups Panko crumbs
Vegetable oil – for frying – plus 2 garlic cloves - halved

Dip the chicken first in the flour then the egg wash and then in the Panko. Repeat this process until all of the chicken is coated.

In a large frying pan heat about ½ inch deep with vegetable oil plus the garlic cloves. Place the chicken strips in the hot oil carefully and turn only once. Cooking time depends on how thin the chicken breast is sliced.

These chicken strips will make a big hit at your table. Make enough!

I haven't tried the Pnko bread crumbs yet. I've done similar with Italian seasoned crumbs. Then I slop a little spaghetti sauce with some slices of mozzarella cheese and melt the cheese under the broiler. Kinda like chicken parmasean.

This sure looks light and crispy. Last time I did fried chicken, I used applesauce instead of eggs for some sweetness.

Catherine, this sounds so good! Especially the idea of putting the garlic in the oil! But, I am such a chicken with frying; I hate hot grease! I think it is out to get me! LOL! I'm going to have to sneak over to your house for a taste of this one. hee hee. Blessings ~ Tanna

I always make these for my kids , it is much better than the (god -knows-what's-in-them) nuggets from out and isn't panko just great :D
