Ingredients:
8 oz. Munster
cheese – grated
16 oz. cottage cheese
4 oz. milk
Zest of 1 lemon
Handful of fresh chives
Handful of fresh cilantro
½ red onion – sliced
3 cloves garlic – chopped
Dash of ground nutmeg
Dash of black pepper
1 cup Italian style bread crumbs
1 tablespoon lemon juice
1 lb. of your favorite macaroni
Drizzle of Olive oil
Butter
Preheat Oven 325 degrees:
In a food processor combine the cottage cheese, grated Munster
cheese, chives, cilantro and milk and process until smooth. Add the lemon zest, salt and pepper to taste
and a dash of ground nutmeg to the mixture.
Heat a frying pan with a drizzle of olive oil. Add the onion and garlic and sauté until the
onion is soft. Add the bread crumbs and
lemon juice and sauté for another minute or two.
Prepare the macaroni as directed and drain.
Prepare a baking dish with a rub of butter and olive oil.
Place the macaroni in the baking dish add the mixture from
the food processor; toss and top with the sautéed bread crumbs.
Bake 20-25 minutes.
This is a perfect side dish.
