~ Mango and Feta Cheese Ice Cream ~



This is a flavor that came to mind while looking at ripe mangos and  feta cheese that I had on hand.  I thought, “why not?”  

Ingredients:

32 oz. frozen mangoes
4 – 5 oz. feta cheese
1 cup of heavy cream
2 tablespoons confectioners’ sugar
2 tablespoons honey
1 tablespoon molasses
2 tablespoons balsamic vinegar

Combine all of the above in a food processor.

 Process this mixture until smooth.

Place in a container and freeze.

Take out of the freezer and let thaw just a bit until manageable.  Place again in food processor and process until smooth and creamy.

Serve.

This is a unique and satisfying taste.  Remember, to adjust the flavors to the amount of frozen mangoes that you have and to your liking.

I might have considered mango and goat cheese but never would I have come up with Feta. I bet they set each other off to blend into a delicious ice cream. I must be more creative.

Wow, you are so creative! I never would have come up with this combo, but if it works in a salad, why not an ice cream? I'd love a taste :)

Ohhhh I love your idea dear Catherine. I would have NEVER tought of mixing feta and mangoes in ice cream. It looks good!

I remember when I was little eating mango ice cream with cheddar cheese in them. I shall try to recreate that recipe. Thank you for sharing and I'm a follower now as well. :)
