Planter’s Peanut Butter Cookies

Living the Gourmet is pleased to introduce Planter’s NUTrition Energy Mix Peanut Butter, a new and delicious product from our friends over at Planters.  Living the Gourmet was given the opportunity of testing out NUTrition Banana Granola Nut, which takes peanut butter to a whole new level, with a wholesome blend of bananas and granola in thick roasted peanut butter.  An excellent source of energy, it is packed with 7 grams of protein per serving as well as 11 vitamins and minerals.

To showcase just how tasty this new adventurous taste in peanut butter is I’ve prepared a batch of peanut butter cookies.  Or, of course, you could just eat Nut-rition off the spoon!

For cookies you will need:

1 cup AP flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ cup oats
¼ cup Planter’s NUTrition Energy Mix: Cinnamon Raisin Granola Nut
¼ cup Planter’s NUTrition Energy Mix: Banana Granola Nut
5 tablespoons unsalted butter
¾ cup white sugar
¼ cup dark brown sugar
1 large egg
1/8 cup whole milk
1 teaspoon vanilla
1 tablespoon currants
1 tablespoon orange zest
¼ cup dark chocolate chunks

Preheat oven to 325 degrees F. and line two baking sheets with parchment paper.

In a large bowl, sift together flour, baking soda, and baking powder.  Add oats and set aside.

In the bowl of a stand mixer, beat together peanut butters and butter until fluffy.  Add the sugars and beat until smooth.  Add the egg and mix well.  Add the milk, vanilla extract, and orange zest.  Add dry ingredients to the peanut butter mixture and mix thoroughly.  Stir in the dark chocolate chunks.

Drop rounded teaspoonfuls onto prepared baking sheets leaving a couple inches between each cookie.  Bake for 10-12 minutes.  When the cookies are done transfer onto a wire rack and cool completely before serving.  Enjoy!

My husband is really going to like this new product. He can eat peanut butter right out of the jar and this is just filled with all the stuff he likes. Those cookies look awesome too.

Oh wow Catherine, my mom just called me to come down and pick up some peanut butter cookies! Now I can enjoy some of her cookie after seeing your's here! They look good enough to eat! Lol.

I've tried once something similar and it was a painful disaster. I suppose it has smth to do with the consistence of the dough. That is why I admire your work very much...they look astonishing :).
