~ Baked Boneless Pork Chops with Sauce ~


 Ingredients:

 5 - Boneless pork chops (about 1 inch thickness)
Dashes of salt
Dashes of black pepper
Drizzle of olive oil

For the Sauce:

28 oz. can crushed tomatoes
5 cloves garlic
1 large onion – sliced
2 cups frozen peas
Dashes of salt
Dashes of black pepper
Dashes of ground oregano
Dashes of garlic powder
Pinch of sugar
Dashes of chili powder
Healthy handful of fresh basil – chopped
2 stalks celery – chopped
1 ½ cups fresh bread crumbs
Grated Romano or Parmesan cheese
Olive oil for drizzling


Preheat Oven 350 degrees:

Drizzle a little olive oil in a baking pan.  Place the pork chops in the pan and season with salt and pepper and another drizzle of olive oil.

Top with the sliced onions, chopped garlic, fresh basil, celery and the crushed tomatoes.  Add the seasonings and peas and top with the fresh bread crumbs.

Drizzle a little olive oil over this and top and finish with the grated cheese.

Place in the oven for 50-55 minutes, depending on the thickness of the pork chops you are using. 

This is a hearty meal and may be served with rice or noodles.

I am perfectly willing to accept that it is just a matter of my palette being so messed up after years of eating the wrong foods, but I do not enjoy eating things like pork chops and pork steaks these days on account of most (if not all) of the fat being trimmed off of the meat. For without the fat, pork has no flavor to me, and adding stuffing doesn't help much.

  23. Sounds great Catherine...we really love our pork chops and this is a wonderful way to cook them. I think it might have to wait a while now before I do them though as with the colder weather coming we really like our warming gravy meals!!
