~ Mashed Potatoes with Cheddar Cheese Bake ~

Ingredients:

5 lbs. potatoes – peeled and quartered
2 cloves of garlic – chopped
1 small red onion – sliced
3 tablespoon of butter
2 tablespoons of sour cream
½ cup of milk
4 oz. cheddar cheese – shredded
Dashes of salt
Dashes of black pepper
Olive oil

Boil the quartered potatoes until fork tender.  Drain the potatoes and place in a large bowl.

Place the chopped garlic in with the hot potatoes, the butter, sour cream and milk and mash with a masher.

Butter a casserole dish and place the mashed potatoes in the dish.  Add the cheddar cheese and toss gently. 

Top with the sliced onion and a drizzle of olive oil.

Preheat Oven 350 degrees:

Bake 25-30 minutes.

These are great with any meal.

I often do cheese and garlic mash at home but I never though of then baking it in the oven....great idea!!
