~ Tomato Pie ~

Ingredients:

For the Crust:

1 ¼ cups flour
½ cup shortening
3-4 tablespoons cold milk
Dashes of dried oregano
Dashes of black pepper
Dashes of garlic powder
¼ tsp. salt

In a large bowl combine the flour and all of the seasonings.  Cut in the shortening until it is crumbly.  Add the milk a little at a time and while forming the dough into a ball.

On a floured surface, roll the dough out to fit a 9 ½ inch pie plate.

Preheat Oven 350 degrees:

Bake the crust for 10-12 minutes before filling.

For the Filling:

2 large tomatoes - sliced
4 cloves garlic – chopped
Healthy handful of parsley – chopped
1 red onion - sliced thin
8 oz. mozzarella cheese - shredded
Grated Romano cheese
Olive oil for drizzling
Dashes of dried oregano
Dashes of garlic powder
Dashes of black pepper

Layer the pie starting with the tomato, then onion, garlic and parsley and grated Romano cheese and mozzarella.  Repeat this process finishing with the grated Romano and mozzarella cheeses.

Top off with the seasonings and a drizzle of olive oil.

Bake at 350 degrees for 25-30 minutes.

This is a very delicious side dish or main course with a nice side salad and a delicious loaf of bread.

Beautiful pie! Catherine, I have a tip when you use tomatoes in a pie, you can also spread bread crumbs below them to absorb the humidity. Blessings,
