Corn Salsa


This is a quick and easy salad to spice up a picnic.  The fresh corn on Long Island is abundant and delicious this time of year and the price is right!

Ingredients:

5 ears of fresh corn – quick boil and sliced from the cob
1 vine ripe tomato - diced
¼ red onion - chopped
1 clove of garlic – chopped
1 stalk of celery – chopped
½ cup of fresh basil – chopped
1 sweet pickle – chopped
½ jalapeño – chopped with seeds
½ bell pepper – chopped

Dressing:

¼ cup vinegar
1 tsp. sugar
½ tsp. salt

Combine all of the above ingredients in a bowl. 

Combine the ingredients for the dressing and add to the salsa.

Serve chilled.
